The 37th Annual Trigg County Country Ham Festival takes place this weekend and many people are bringing hams for judging. Dr. Rentfrow talks about the criteria: confirmation, which is the overall shape of the ham, how plump it is, and whether it has a pleasing shape - like a classic teardrop; workmanship, the ability to clean the ham up - extra curing, mold (yes, mold! he explains this), etc.; and color and aroma! UK Extension event organizers who started the Festival said they had to choose between hams and moonshine in celebrating a local product and they thought they ought to go with hams.
