WKCTC Introduces A'la Carte Evening Culinary Class

Chicken andouille, schnitzel, tiramisu and more are on the subject list for students attending a culinary class starting next week at West Kentucky Community and Technical College in Paducah. Kate Lochte speaks with Chef Patrick Fletcher about the five-week course on Sounds Good.

Chef Patrick Fletcher and New Orleans native Anita Granier teach the new five week A'la Carte Series Thursday evenings from 6 to 9 p.m. through November 13 in the Anderson Technical Building kitchen on the WKCTC campus in Paducah. Registration is at 270-534-3335. Bring and apron and wear closed-toed shoes. 

Fletcher was drawn to cooking in his teens and while attending University of Kentucky. He later attended Johnson & Wales University Culinary program in Colorado. A Paducah native, he found himself drawn back to his hometown. He was one of the first chefs at Ristorante Di Fratelli, later worked in Savannah, Georgia; in Columbia, Missouri and various catering companies. He has worked with WKCTC for five years. 

Trained in Italian cuisine, Fletcher says he finds the style very comforting and family-oriented. He's recently branched out into Thai and Spanish cooking. The Culinary Series at WKCTC has featured many diverse styles of cooking from German food, Cajun cuisine and British cooking. Participants come in, get the packet of recipes and will work with instructors at cooking stations to create and then enjoy the dish.

Matt Markgraf joined the WKMS team as a student in January 2007. He's served in a variety of roles over the years: as News Director March 2016-September 2019 and previously as the New Media & Promotions Coordinator beginning in 2011. Prior to that, he was a graduate and undergraduate assistant. He is currently the host of the international music show Imported on Sunday nights at 10 p.m.
